Thanks for posting the stills, unfortunately the video is not available in my country... ;(
As for the colors I think your guesses are correct, since most breeding stock is homozygous for grey by now due to the constant use of Arab bloodlines, all the nice colors are hidden... ;( So you can only look at the youngsters and have a glimpse at what colorful breed they once have been.
There are only very few breeders using non-grey-bloodlines and breeding for the bay or black lines, solid colors are still preferred in Europe. I have never seen a chestnut Lipizzan, that color was despised in old Spain and it has a long history of being avoided in breeding stock at that times.
Since I have collected several pics of Hamilton's paintings, I will post them below for you. The one of the broodmares comes in two pieces, it actually is one large painting. The white stallion#28 looks like a max sabino to me, he has a black rim around his eye, what do you think? The other one is a homozygous cream, maybe perlino?
